Where I live, I can not find fresh tomatillos. I don’t like to use canned because they have unwanted ingredients added. At the market on the weekend, I saw and bought green tomatoes from one of my favourite farming collectives. Green tomatoes make a good substitution for tomatillos in green salsa. This morning I woke up, saw my beautiful green tomatoes starting to turn red and began making salsa.
It does not look green because I used a red jalapeno and two red chillies. But despite the colour, the taste is divine.
If you don’t enjoy the spice of chilli, leave it out. The flavour is still wonderful without the spice. Roasting the tomatoes, onions and garlic adds depth while the cilantro and lime juice give a fresh. lightness.
Roasted Green Salsa
Ingredients
800 grams organic green tomatoes (or tomatillos), roasted
1 brown onion, ends trimmed, skin left on, roasted
6 cloves garlic, one end trimmed, skin left on, roasted
1-2 red jalapeno peppers (optional)
handful of cilantro stems
1 tbs freshly squeezed lime juice
1/2 tsp Himalyan pink salt
Method
Set an air fryer on roast for ten minutes and let it heat up. Roast tomatoes, onion and garlic. While the vegetables are cooking, sterilise three small jars.
When the vegetables are finsihed cooking, remove the outer skins and add to a blender jar. Add the cilantro stems, chilli, lime juice and salt. Blend until smooth.
