Jerk Sweet Potato Fries ... Bursting With Colour, Flavour And LOVE!

These sweet potato fries are an adaptation from Jenne Claiborne’s recipe for Jerk Sweet Potato Street Fries in NYTimes Cooking.

Jerk is a Jamaican spice mix. I use Herbie’s spice mix here but you can mix your own if you like.

They are a fun way to eat sweet potatoes. This makes 2 small or 1 large serve.

Jerk Sweet Potato Fries

Ingredients

2 medium or large orange sweet potatoes, peeled and chopped into fries, thick or thin as desired

2 tsp extra virgin olive oil

1-2 tsp Herbies jerk seasoning

1 tsp garlic powder

1 tsp dried thyme

salt to taste

1/4 large red pepper, stem and seeds removed, finely chopped

1 clove garlic, peeled and grated

1 tsp ginger, peeled and grated

ground black pepper

ground nutmeg (freshly ground if you have it)

1 green onion, finely chopped

handful of fresh cilantro, chopped

1 tsp + fresh lime juice

Method

Scrub, peel and cut two sweet potatoes in to fries. Place in a medium sized bowl. In a small container, mix the jerk, garlic powder, thyme and a pinch of salt. Mix well. Sprinkle oil over fries and dust the sweet potatoes with the spice mix. Mix thoroughly with clean hands or a fork. Set aside.

Heat an air fryer to 200 c and set the timer for 15-17 mnutes if you have thick fries or slightly shorter for thinner fries.

Peel and chop the onion. Peel and grate the garlic and ginger. Heat a non stick ceramic pan and add the onion and garlic. Cover and cook for several minutes on a low heat. Cut the red pepper. Add the freshly ground pepper and a generous pinch of nutmeg. Add in the red pepper and continue to cook for several minutes covered until the red onion is softened slightly and the onion is cooked.

Thinly slice the spring onion and cilantro and squeeze half a lime.

Plate the sweet potato fries when they are cooked to your preference. Add the green onion and cilantro to the sautéed vegetables and spoon over the sweet potato fries. Add a splash of lime juice, serve and enjoy immediately!
