A Leafy Green Salad That's Disarmingly Good!

Leafy greens are so good for me and I am always trying to make sure I eat them in one form or another. A simple leafy green salad with whatever salad greens you have can be DELICIOUS with a tasty dressing and a couple simple additions

Here’s my idea of delectable! I use a lime based dressing with no fats but tons of flavour.

Leafy Green Salad

Ingredients

Bowl of organic mixed lettuce leaves, washed, spun, air dried and roughly chopped

Handful of organic baby spinach leaves, washed, spun, air dried and roughly chopped

2 slices of red onion, finely chopped

large spoonful of pickled julienned carrots (pickled in lime juice, raw honey and salt)(optional)

2 large spoonfuls of cashew nut and hemp ‘parmesan cheese’

Dressing

1 1/2 tbs fresh lime juice

1 tbs No fish sauce (or Redboat/Son fish sauce)

1-2 tsp raw honey

1 clove garlic, peeled and pounded in mort and pestle

1 small red chilli, stem removed, sliced and pounded in mort and pestle

several pinches of Himalayan sea salt (omit if using fish sauce)

Method

To make the dressing, add the lime juice, No fish sauce (or fish sauce), honey and salt to a small bowl. Peel and slice the garlic. Trim the stem off the chilli and slice. Add the garlic and chilli slices to a small mort and pestle with a pinch of salt and pound until you have a paste. Add to the dressing. Taste and adjust to your preferences. Set aside.

Wash, spin, air dry and roughly chop the mixed lettuce leaves and baby spinach. Add to a large salad bowl. Trim the ends and peel a red onion. Finely chop 2 slices and add to the salad. Add a spoonful of pickled carrots.

Dress the salad with the dressing and toss. Spinkle the ‘parmesan cheese’ on top.

Enjoy immediately!
