Cassava Crackers To Dip In To!

Crackers, like bread, are certainly not a necessary or healing food but they are fun to eat!  They provide a little crunch and satiety whether eaten on their own or paired with a dip, soup or savoury dish.  

These are simple to make, have a minimal amount of fat, salt and taste great.

Cassava Crackers

Ingredients

180 grams organic cassava flour

24 grams golden faxseeds, ground

1/2 tsp Himalayan pink salt (optional)

1/2 tsp organic garlic powder

2 tbs chilli lime seasoning or any seasoning of choice

2 tbs organic avocado oil

3/4 cup filtered water

1/4 tsp baking soda dissolved in 1/2 tsp fresh lemon/lime juice

Method

Preheat oven to 150c.

Weigh and grind the flaxseed. Empty the ground seeds in to a large bowl with the cassava flour, salt, garlic powder and seasoning of choice.  In a small dish, combine the baking soda and lemon/lime juice.  It will fizz and expand.  Add the water, oil and baking soda mixture to the flour. Mix until you form a dough.  

Cut the dough in half and roll out each between two pieces of baking paper as thin as you can make it. I have rectangular baking sheets and I roll the dough to fit the dimensions of the sheets. Once it is rolled out, take a pizza cutter or knife and score the dough into 2 inch squares. Then score each square from corner to corner making trianges.

Bake for 40 minutes. Take out the crackers, break apart and turn over if browning. Put them back in the oven for another 15 minutes. Turn off the oven and allow the crackers to cool in the oven until cool. When at room temperature, store in an airtight container in the cupboard.

Serve with pico de gallo or any vegetable based dip! They are delicious on their own!
