Sometimes I like to post fresh fruit to help me remember the best, most healing AND delicious food can be the simplest.
Today it is a summer combo I love … fresh mango, yellow peaches and passionfuit. It’s sweet, tart and fruity.
I like to make a large bowl and store it in the refrigerator to enjoy throughout the day.
This makes 2-4 servings
Mango, Peaches and passionfruit
Ingredients
2 fresh, ripe mangoes
4 yellow peaches
2 large passionfruit
a squeeze of lime or lemon juice (optional)
Method
Wash the mangoes, peaches and passionfruit.
Cut the mango in half closely down one side of the inner pit. Cut the second half near the opposite side of the pit. Score the mango flesh on each cheek in to squares. Fold the cheeks back and cut off the squares of mango flesh. Cut off the excess flesh from the pit. Place the mango flesh in a mid sized glass storage container.
Make sure you eat the flesh left over on the skins and pits before you compost them. Every drop of mango is precious!
Cut the peaches in half, twist and put the two halves apart. Remove the inner pit. Cut each half into four slices and chop into chunks. Repeat with the other peaches. Add to mangoes.
Cut the passionfruit in half. Be mindful if juice starts to leak out. Open the passionfruit over your bowl of fruit so you don’t loose the juice as it is delicious. Scoop out the passionfruit pulp and add it to the mangoes and peaches.
Squeeze a small amount of lime or lemon juice over the fruit. Mix thoroughly and enjoy right away or refrigerate until later.
