Thai Red Curry Noodles With Green Beans!

These noodles are delicious, satiating and easy to make! I adapted this from a recipe I found on the internet for Thai Red Curry Noodles written by Claire Cary.

This makes one serving. Adjust according to your needs.

Thai Red Curry Noodles With Green Beans

Ingredients

60 grams brown rice noodles

1-2 cloves of garlic, peeled and pounded

1 tsp ginger, peeled and pounded

1/2 - 1 tbs Thai red curry paste (see post dated 24 March 2022)

1 tbs tomato paste

1/4 cup organic coconut milk

2 tbs No fish sauce (see post dated 2 January 2026) (or 1 tbs Redboat/Son fish sauce)

1 tbs maple syrup

1 tbs fresh lime juice

handful of green beans, ends trimmed and cut in to 1 inch length

salt and fresh pepper to taste

Method

Heat water to a boil in a wok. Cook the rice noodles according to package instructions. Drain and set aside.

Pound the garlic and ginger in to paste. Heat the wok and simmer the garlic and ginger paste with the Thai red curry paste on a very low heat covered for 5-10 minutes. Stir occasionally. Add the tomato paste and simmer for a few minutes. Add the coconut milk, no fish sauce, maple syrup and lime juice. Add the green beans and simmer for 2 minutes.

Add the rice noodles and continue to cook for a couple of minutes.

Serve and enjoy right away!
