'Cheese,' Tomato And Red Pepper Pizza On A Potato Crust

I just discovered I can make a pizza crust by flattening half a steamed potato. Simple, easy, healthy and oh so delicious. A crust made with no flours, no yeast, no eggs just potato.

You can put whatever you choose on top. Here I use my homemade vegan mozzarella ‘cheese,’ spiced mackerel and tomato sauce, red onions, chilli flakes, tomatoes and red pepper, topped with green olives. It is delicious!

I used one large potato and it made a crust big enough for two pizzas to feed two.

Ingredients

Potato Crust

1 large potato, scrubbed, steamed and cut horizontally

Topping

2-3 slices vegan ‘mozzarella ‘cheese’ (see post dated 8 March 2022)

1/2 cup spiced mackerel and tomato sauce (or any tomato sauce) (see post dated 29 April 2026)

2-3 slices red onion, chopped

several pinches of chilli flakes (optional)

1 ripe, organic large tomato, thinly sliced

1/2 red pepper, stem and seeds removed, sliced thinly

3-5 green olives, pits removed and chopped, for serving

Method

Preheat the oven to 200 - 220 c.

First make the crust. Take a steamed or boiled potato and cut it in half horizontally. Place it on a sheet baking paper, skin side down. Cover with another sheet of baking paper. Place a heavy flat item such as a wooden cutting board on top and press down hard to flatten the potato. You may need to use a rolling pin to flatten further and then finish off with the heavy flat item to further flatten and even out the crust. If you start with a large potato, you will come out with a large pizza crust (as pictured below).

Bake the crust on a pizza pan or stone for about 10-20 minutes, until the crust is starting to brown.

Take the crust out of the oven and spread with vegan mozzarella ‘cheese,’ tomato sauce, chopped onions, chilli flakes if using, red pepper and tomato slices. Bake for about 20-25 minutes.

While the pizza bakes, chop the olives and remove the pits. When the pizza is done, cut in to four smaller slices, top with green olives and tuck it to your delicious pizza!
