If you don’t eat corn, there is no need to deprive yourself of nachos. Here I make them with my cassava crackers instead of corn chips. Once you have made the crackers, nut cheese and black beans, they are a cinch to put together.
They will fill you up. One plate easily feeds two especially paired with something lighter such as a simple salad or soup for a complete meal.
Nachos With Cassava Chips
Ingredients
Handful or two of cassava crackers (see post date 31 March 2026)
5-6 thin slices of cashew ‘cheddar cheese’ (see post dated 22 January 2022))
Several spoonfuls of instant pot or cooked black beans, mashed with a fork (see post )
Roasted tomato poblano salsa (post dated 6 February 2026) (or any salsa of your choice)
Bowl of finely chopped iceberg lettuce
Pico de gallo
4-5 small Roma tomatoes
2-3 slices red onion, finely chopped
Handful of fresh cilantro, finely chopped
1/4 avocado flesh, cut into squares
1 tbs fresh lime juice
1 tbs fresh orange juice
1 small clove garlic, peel and pounded
1 small red chilli, stem removed and pounded
1/2 tsp extra virgin olive oil (optional)
salt and pepper to taste
Method
Preheat the oven to 200c.
In an oven dish, lay out a handful or two of cassava crackers so they overlap. Layer the thin slices of nut cheese on top. Spoon the salsa and top and lastly spoon the mashed green beans on top. Bake for about 12 minutes in the oven.
While the nachos cook, make the pico de gallo. Peel the garlic and add it to a mort and pesle. Trim the stem off the chilli, roughly chop and add to the garlic. Pound the chilli and garlic with a pinch of salt until you have a paste. Add the paste to a small bowl along with the lemon and lime juice. Add in the olive oil if using. Set aside..Cut the tomatoes, onion, cilantro and avocado and add to the lime juice mixture. Taste and adjust if need be. Finely slice the iceberg lettuce and place in a bowl. Set aside.
Take the nachos out of the oven. Carefully transfer the chips, cheese and beans on to a serving plate. Top with iceberg lettuce and pico de gallo.
