I keep coming back to these rolls, with small variations because they are SO good and my body craves them from time to time. These are made with brown rice paper and they are packed with vegetables and herbs without the noodles. Scrumptious!
This serves one but adjust for how many you need and will be consumed right away as they are best fresh. If you have extra vegetables, store them in a glass, air tight container in the refrigerator and roll them up the next day.
Vegetable And Brown Rice Paper Rolls
Ingredients
3 brown rice papers., per serve
1 carrot, ends trimmed, peeled and julienned
1 cucumber, ends trimmed, peeled and julienned
1/4-1/2 red pepper, stem and seeds removed, julienned
2 radishes, sliced and julienned
3 slices red onion, finely chopped
1/2 avocado flesh, sliced
Large handful of fresh cilantro, finely chopped
Large handful of fresh mint, finely chopped
Dipping Sauce
5 tbs fresh lime juice
4 tbs No fish sauce (see post dated 2 January 2026)
1-2 tsp raw honey
1/4 tsp Himalayan pink salt
1-2 cloves garlic, peeled and smashed
1-2 red chillies. stems removed and smashed
Method
First make the dipping sauce by squeezing the lime juice, adding the No fish sauce and honey and mixing well. Peel the garlic, trim the chillies and smash in a small mort and pestle until you have a paste. Add to the dressing and mix well. Taste and adjust with salt and pepper.
Prepare your vegetables. Trim and peel the carrot and cucumber and julienne both. Peel, slice and finely chop the red onion. Slice and julienne the radish. Remove the stem and seeds from the red pepper, slice and julienne. Open an avocado and scoop out half the flesh and slice. Finely chop the fresh coriander and mint leaves.
Arrange all the vegetables on a plate. In a wide, low bowl, add warm filtered water.
Take a brown rice paper and dip it in the warm water. Lay it on a flat cutting board. Layer the vegetables, one on top of of the other, starting with the herbs along the lower half of the sheet leaving room on all sides. Fold the bottom of the sheet over the filling, fold the left and right sides in and keep rolling until it is rolled tight.
Repeat for all of your rice paper rolls.
Serve with the dipping sauce and enjoy right away!
