Today’s lunch is a leafy green salad with vegetables and dulse flakes dressed in a lime and honey dressing.

Leafy Green Salad With Vegetables And Dulse Flakes

Ingredients

handful of mixed lettuce leaves, washed, spun and air dried

handful of baby spinach, washed, spun and air dried

handful of fresh cilantro leaves and stems, finely chopped

small handful of fresh mint leaves, finely chopped

2 fresh tomatoes, chopped

1 cucumber, ends trimmed, peeled and sliced

1/4 yellow pepper, stem and seeds removed and chopped

several slices of red onion, finely chopped

2-3 green onions, thinly sliced

1 tbs dulse flakes

Dressing

3 tbs fresh lime juice

1 tsp raw honey

1 clove garlic, smashed

1 red chilli, smashed

1/4 tsp pure kelp powder

Method

First make the dressing by squeezing the lime juice in to a small bowl and mixing in the honey. Peel the garlic and trim the stem off the chilli and slice both. Add the chilli, garlic and kelp powder to a mort and pestle and pound until a paste forms. Add the lime juice and honey to the mort and pestle. Mix thoroughly, taste and adjust if necessary. Set aside.

Add the prepared lettuce leaves and baby spinach to a wide salad bowl. Chop the cilantro, mint and finely slice the green onions. Add to the salad.

Slice and chop the tomatoes, yellow pepper, red onion and cucumber and add to the salad. Mix all the ingredients well. Serve a generous bowl of salad and dress with about 2-3 tbs of dressing. Sprinkle with dulse flakes and enjoy right away.

Store any left overs in a glass airtight container without the dressing or dulse flakes in the refrigerator.
