These nori rolls are adapted from Medical Medium Recipes. I found them in one of his books and I will admit, when I saw them at first, I thought the combination of alfalfa sprouts and bananas was weird at best. But something got me to try them and I was a bit blown away at how well the ingredients worked together. In these, I added dulse flakes, finely chopped red onions and a spicy, slightly sour dipping sauce which I particularly enjoyed with the sweetness of the banana.
Banana And Alfalfa Sprout Nori Rolls
Ingredients
serves 1
2 nori sheets (with nothing else added)
2 cups alfalfa sprouts, preferably home grown (see post dated 16 January 2022)
1 large banana, peeled and cut lengthwise in to two slices
2 tbs red onion, finely choppped
2 tsp dulse flakes
Dipping sauce
3 tbs fresh lime juice
1/2-1 tsp raw honey (depending on how sour you like your sauce to be)
1/4 tsp pure kelp powder
1 clove garlic, peeled and smashed in to a paste
1 red chilli, stem removed, sliced and smashed in to a paste
Method
Make the sauce by peeling the garlic and trimming the stem off the chilli. Add the garlic, chilli and dulse powder in to a small mort and pestle and pound until you have a unified paste. Juice the lime and add the lime and honey to the paste. Mix thoroughly and taste. Adjust if necessary. Set aside.
Lay nori sheets in sun, warm oven or a wide frying pan over a low heat for a couple of minutes to ensure they are dry and crispy.
Place one nori sheet on a Japanese sushi mat. First lay down the alfalfa spouts. Cut one length of banana in two and lay the banana slices on top of the sprouts. Sprinklw the finely cut red onions and dulse flakes. Top with another layer of alfalfa sprouts. With a small dish of filtered water by your side, roll the nori up tightly. When you come to the end, dip your finger in the water and run it along the farthest edge. Seal the roll and cut it in to two with a sharp, clean knife on a clean wooden cutting board. Repeat with the second sheet of nori. Cut in two.
Serve with the dipping sauce and enjoy immediately!
