Day 6 ... The Medical Medium 3:6:9 Advanced Cleanse

This salad is adapted from Anthony William’s Tomato, Cucumber And Herb Salad in his book ‘Cleanse To Heal’ (page 360). It has tons of great recipes and ideas for meals to eat on the cleanse and after. I enjoyed this with a leafy green salad too.

Serves one.

Tomato, Cucumber, Pepper And Herb Salad

Ingredients

2 ripe, organic tomatoes

1 cucumber, ends trimmed and peeled

1/4 large red, yellow or orange pepper, stem and seeds removed

several slices of red onion

2 green onions

Handful of cilantro

generous pinch of parsley leaves

generous pinch of mint leaves

generous pinch of fresh dill

1 tbs dulse flakes

Dressing

3 tbs lime/lemon juice

1 tsp raw honey

1 clove garlic, peeled and pounded

1 fresh, red chilli, stem removed and sliced

1/4 tsp pure kelp powder

Method

Peel and slice the garlic. Trim the end of the chilli and slice. Add the garlic and chilli with the kelp powder to a small mort and pestle and pound until a paste forms. Squeeze the lime juice and add to the paste with the honey. Mix, taste and adjust if necessary. Set aside.

Wash the cucumber, pepper and tomatoes. Trim the ends off the cucumber and peel. Remove the stem and seeds from the pepper. Slice and chop the vegetables and add to a salad bowl. Peel a red onion, make three slices and finely chop. Add to the salad. Wash, spin and air dry all the fresh herbs. Place them all on a wooden cutting board and finely chop. Add to the salad and mix all the ingredients. Sprinkle with dulse.

Add the dressing, mix well and enjoy right away.
