This is the final day of eating salads. Tomorrow, the cleanse ends with a day of consuming just juices and blended fruit. Today’s salad is a combination of everything - leafy greens, baby spinach, alfalfa sprouts, vegetables, sprinkled dulse flakes with my zingy dressing. Fresh and delicious!
Alfalfa Sprouts And Leafy Green Salad
Ingredients
Handful of organic mixed lettuce leaves, washed, spun and air dried
Handful of organic baby spinach leaves, washed, spuj and air dried
Handful of fresh, homemade alfalfa sprouts
1-2 organic, ripe tomatoes
1 cucumber, ends trimmed and peeled
1/4 red pepper, stem and seeds removed
2-3 sliced red onion
2 green onions
1 heaping tbs dulse flakes
Salad Dressing
3 tbs fresh lime juice
1 tsp raw honey
1 clove garlic, smashed
1 red chilli, stem removed and smashed
1/4 tsp pure kelp powder
Method
Prepare the dressing by squeezing the lime juice and combining with the honey in a small bowl. In a mort and pestle, pound the garlic clove, chilli and kelp in to a paste and add to the lime juice and honey. Mix well, taste and adjust according to your particular tastes.
Roughly chop the mixed lettuce leaves and baby spinach and add to a salad bowl. Add the alfalfa sprouts. Slice and chop the tomatoes, cucumber, red pepper and onion. Thinly slice the green onions. Add all the vegetables to the leafy greens. Mix well. Spoon 3-4 tbs of dressing on top and mix through. Sprinkle with dulse flakes and enjoy!
